drove all the way to newmarket to the milbree viking bakery for all these treats :)

this is quite an involved dish to execute, with multiple steps in its preparation. this was the second time i assisted in its making (dec08/jan09) and although it looks a little less refined than in the photograph in the balthazar cookbook (641.5944 MACN), it still tasted damn good.

i call it fish loaf.
